For 4 persons
400-500g Wheat flour
4 - 5 Eggs
Salt
About 1/16 L to 1/8L Water or Milk
Nutmeg, freshly grated or dough spice according to your taste.
Boil about 4 liters of salted water in a big wide pot (20 cm to 28 cm caliber). Mix flour, eggs, salt and water (or milk) to a pasty dough. Only add as much liquid to make the dough run pasty from your spoon.
If your dough is a little too thin add some flour. If it got too sticky add a little bit more water. don't be too strict with the quantities. Spaetzle can be prepared with thin or thick dough.
As soon as the water is boiling add the dough in shares to the Spaetzle Wonder and scrape it swiftly through Muxel's Spaetzle Wonder into the boiling water. Take the Spaetzle out of the pot with a skimmer as soon as they come back to the surface. if they cook for to long they will get sloppy and loose their taste.
